Poached egg, Sausage and Seasoned Potato Breakfast

This flavorful breakfast to start the day is packed with 42g of protein and 550 total calories

This is a great, hearty recipe that will keep you full and is packed with protein. Its cheap, easy to make and doesn't have a ton of ingredients. Once you learn how to poach an egg its an awesome way to add velvety flavor to any dish without needing extra sauces and empty calories. I make this all the time for my ICU shifts where you don't know when you'll get to lunch and need something to keep your brain and body active.
Poached egg, Sausage and Seasoned Potato Breakfast
Ingredients
1 medium Russet Potato
2 large eggs
4 Turkey sausage patties
1/4tsp Paprika
1/4tsp Onion Powder
1/4tsp Chilli Powder
1/2 tsp Black Pepper
1tbsp olive oil
1/2 lemon
Directions
Dice potato in to 1 cm cubes
Toss potato cubes in paprika, onion powder, chili powder and black pepper
Heat olive oil in a large skillet to medium high heat
Once heated add seasoned potatoes, stirring occasionally, cook till golden brown on all sides
Add turkey patties to skillet and brown on both sides and cooked through
Fill a pot half full of water heat to a simmer
Juice half a lemon and add to pot of water
Using a large spoon, carefully create a vortex in the pot and add one egg to poach, cook until whites are cooked through about 2-3 minutes
Add potatoes, sausage and eggs to bowl, garnish with a pinch of paprika
Optional: Add tobacco or diced green onions for more heat and garnish
